At Laïta, we mainly use 3 types of whey:
– Sweet whey: this comes from the production of pressed cheese at the Ploudaniel site. It is dried at our Landerneau and Créhen sites and sold in powder form.
– Soft whey: a co-product of our soft cheese production at Ancenis, it can either be used in some of our formulated products or concentrated and sold in liquid form.
– Whey from caseinate production: this is generated during the production of acid casein at Créhen. It can then be dried or filtered to remove some of the mineral salts before drying, to accentuate the sweet flavor.
