Buttermilk powder

When butter is produced and the fat network is created, a by-product is created.
The composition of this by-product is similar to that of skimmed milk. When cream is churned to make butter, a by-product is expelled from the butter mass : this is buttermilk.

The composition of buttermilk is similar to that of milk with a lower fat content (6%). Buttermilk contains :

  • Whey proteins,
  • Lactose,
  • Minerals.

Buttermilk powder is also rich in phospholipids and polar fatty acids, giving it the following properties :

  • Emulsifying,
  • Stabilising,
  • Water retention
  • Browning
